Raviolis with Homemade Dough


Easy Egg Pasta Dough
(flour sack towels)*

2 1/2 - 3 cups unbleached all-purpose flour
4 large eggs
1 Tablespoon olive oil
1/2 teaspoon salt

I use the traditional manual pasta machine found in most cooking stores.
Mound flour on work surface. Make a deep well in the center adding eggs, oil, and salt. Use fork to whisk ingredients together till enough of the flour has been worked in to form a soft dough. Knead for ten minutes. Cover let rest 45 minutes.
Cut dough into 4 pieces, keeping covered the ones resting. Work with one piece at a time beginning at widest setting. Tip-DD finishes with 2nd to last setting of dough thickness for a hearty ravioli!

*Flour Sack Towels are basic oversized lint-free cotton towels that work extremely well for resting pasta dough. Inexpensive and purchasable almost anywhere.
